3/4 cup of light brown sugar
2 tablespoons of salt
1 tablespoon of chipotle chili powder
1 tablespoon of smoked paprika
1 tablespoon of garlic powder
2 teaspoons of ground cumin
1/2 teaspoon of cayenne pepper
1/2 teaspoon thyme
1/2 teaspoon of ground cinnamon
So this is my go to BBQ rub for just about everything. When the summer starts to heat up and cooking indoors seems like the 3rd ring of hell, we go outside and fire up the grill. Like with every rub recipe the ingredients can be changed to your taste. Make it your own! That’s whats so great about BBQ. It’s the type of cooking you can really make it yours.
Now that its fall and the BBQ days are almost over, I put one more pork roast on the smoker. As I sit there trying craft the perfect balance of smoke and meat, I reflect on the summer season. It was my first summer in a while that I had a backyard. My BBQ muscles were weak. The cheap smoker didn’t help. Am hopeful that next year I will be back in the swing. So cheers to long sunny day, may they come back sooner than later, and to hell with the weather weasel named Phil.
